GARLIC HERB BISCUITS

5One fine Saturday afternoon after putting her baby to sleep the girl decided to bake the biscuits, the recipe for which she had bookmarked long back. This recipe was from one of her cousin. She had been trying to start baking from a while now but unable to due to some or other problems. With new determination and enthusiasm she started on the recipe. Humming some song she was happy that she kick started her baking wish with small recipe (only 10 minutes bake time). She greased the baking tray with butter, preheated the oven and was working on the dough when Snap!!!! The oven shut down. The ceiling fan stopped. There was the electricity meter that tripped. With heavy heart she realized again that her baking dream was going down the drain. She tried again. She fixed the meter, put the oven for pre-heating. Again same story. She tried for one last time. Same.

Her husband came to check. He wanted to know the reason why electricity was going off again and again. He smirked seeing my kitchen disaster. But a girl has to pick up from where she left and begin again. She was determined not to waste the big ball of dough. She was determined to have a satisfying end result. She decided to deep fry the biscuits. And voila. It came out well. It tasted of garlic ย bread. When her son woke up he had the biscuits and loved it. She was happy that she didn’t give up. More than that she was happy to see her son enjoying the biscuits.

3Isn’t life like that? Man proposes and God disposes. The story above is my story a couple of weeks back. I avoided having a disastrous weekend by changing my plans. Change is the only constant thing. When we make plans we must also be ready to embrace change and failure.

So enough of the chatting and here’s the much talked about recipe.

INGREDIENTS:

All purpose flour/Maida – 4 cups

Baking Soda – 1 tsp

Baking powder – 2 tblspn

Salt – 1 tsp

Garlic & herb butter – 180 gms

Buttermilk – 1.5 cups

INSTRUCTIONS:

  1. Prepare buttermilk by taking 1.5 cup milk in a bowl and adding 1 tsp lemon juice. Don’t stir it for 10-15 minutes and the milk will curdle. Strain the buttermilk and keep aside.
  2. In another bowl, take maida, baking soda, baking powder and salt. Mix well.
  3. Cut chilled butter in cubes and add it to the flour.
  4. Using your hands mix the butter into the flour making a crumb like texture.1
  5. Add the buttermilk slowly and knead it to a smooth dough.2
  6. Flatten the dough out in a clean surface. First add some flour on the surface and then place the dough on it and flatten it out. It should not be very thick ( approx 5 cms thick)
  7. Cut them in desired shapes.
  8. If you are baking then, preheat the oven at 210 degrees. Grease a baking pan with butter and place the biscuits. Brush the top of the biscuits with the buttermilk. Bake for 10-15 minutes till the top is browned.
  9. You can deep fry too by adding the cut pieces in hot oil. It will double in size and slightly change color. Remove and drain.

Since I used garlic – herb butter the end result tasted like garlic bread. It was enjoyed by my son as it is. Or it can be enjoyed with some jam or egg curry or apple jam or the dates chutney.
