BROCOLI THORAN/STIR FRY W COCONUT

2Thoran is a south indian dish with excellent flavour profile. I am not sure how many of my north indian friends prepare thoran but it is considered to be healthy and versatile dish. No meals is complete without a thoran. Thoran basically is finely chopped vegetable with coconut stir fry. It has minimal use of the hard spices and is good on stomach. You can make thoran from almost all vegetables. The oil quotient is also minimal as this cooks in its own juices.

I made broccoli thoran. It is an unusual one and you won’t find it in regular use. Growing up I never heard of broccoli or may be just in text books. Now for my son I purchase broccoli and always have enough of it. Since I cannot have broccoli or cauliflower due to medical reason I have enough of broccoli with one purchase. So I decided to try the broccoli thoran. It came out well and you should definitely try this one. I need not outline the goodness of broccoli as you can get this online anytime. Coconut is considered as super food. So nothing can go wrong with these ingredients.

1So here goes,

INGREDIENTS:

Brocoli – 1 cup

Scraped coconut – ½ cup

Cumin – 1 tsp

Green Chilly – 1 big

Curry Leaves – 1 stem

Shallots – 3-4

Turmeric – ½ tsp

Oil – 1 tblsp

Salt –As per taste

INSTRUCTIONS:

  1. Wash, clean and chop broccoli finely.
  2. In a blender, blend coconut, cumin, turmeric, green chilly and shallots. Blend it once or twice. Need not be very smooth. Do not add water.
  3. Heat a kadai with oil.
  4. Once oil is hot splutter mustard.
  5. Add the broccoli and saute on high heat for a minute.
  6. Lower the heat and add the coconut mixture and give a good mix.
  7. Add curry leaves in.
  8. On low flame, close with a lid.
  9. Keep opening the lid and mixing the contents so it does not burn.

The contents will cook under the juices. Serve hot with rice.

TIPS:

  1. If the thoran is sticking to the bottom of kadai add a tablespoon of water and let it cook on low flame.
  2. Make sure the coconut mix is not pasty and is blended just to crush the coconut + shallots + chilly + cumin.

Enjoy this wholesome, yummy and healthy thoran with your rice.
